Most bitters are built by tradition: a recipe passed down, a formula intuited over decades of trial and error. We have deep respect for that history. We just don't stop there.

Every bitter.ist formula begins with volatile compound analysis. Ingredients that share aroma compounds have natural flavor affinity. That's the core principle of flavor pairing science, validated in food chemistry research and popularized by work like The Flavor Matrix. A primary ingredient like White Port carries acetaldehyde, ethyl acetate, and floral terpenes. But you don't care about that. We find the botanicals that speak the same chemical language & build the bitter around that conversation, so your drinks taste amazing. We just use science to get there.

Bittering agents provide structure and length. Aromatic botanicals carry the identity. Modifiers create the finish. Every ingredient is intentional.
